This weeks photos are all about the little details from the past few weeks: spots of charred sugar on roasted pineapple, bathing in maple spice glaze and topped with a dollop of fresh St. Mary’s goat cheese. Bay leaves crunchy and curled up on the edges from heat. Pork tenderloin crusted heavily in herbs and spices, basted with its jus and fresh fruit compote. Slowly braised beef brisket heaped with cloves of sweet roasted garlic and pungently herbal rosemary.
